I have a questions for the experts. In an earlier
post, I mentioned I have 8 briskets in the freezer.
When you smoke a whole brisket (the kind in the cry-o-vac),
do you trim any of the fat off? I used to trim a good
portion off but now
wonder if I should just leave it all on
and trim it later. Any advice would be helpful.
