I agree with Brian, just how cold is cold? We did a turkey 3 years ago in the -20° range and th
e cooker used more charcoal and we cooked it about an hour longer than normal, but it tasted as good as the birds we had done in the summer. This winter I am looking forward to doing ribs and a brisket (or 2) and the only changes that I am planning is pu
tting my smoker in the garage (with the overhead door open. I figure if the smoker is out of the wind and I keep the fire a bit hotter I should do just fine. The absolute best bit of advice that I have gotten from here is to rely on a meat thermometer to
tell when a batch is done. There is no point making this a guessing game.
