The classic barbecue joint in KC is Arthur Bryants (1727 Brooklyn). Many say it ain't the same since ol' Arthur took his sauce to heaven, but it's still a KC institution.
Ollie Gates learned to be a pitmaster at Arthur's knee and does a mighty fine j ob overall, but his several locations take on more of a slick, corporate appearance.
I'm fond of the Smokestack in an area of KCMO known as Martin City (135th & Holmes). Some good barbecue, side dish variety with huge onion rings, and a nice selectio n of interesting beers. And hands down, the BEST baked beans I've ever had.
If you're looking for a blues roadhouse barbecue, try BB's Lawnside Barbecue. Some terrific live blues Thursday through Sunday night, acceptable food, and suitably roadhouse y atmosphere.
Good luck and report back what you found!
