Wagner,

If your hickory chunks were green you would definitely get a bitter
flavor. It is always a good idea to burn your wood down to coals
before using it. Replenish your fire with wood coals that you have
burned down .

Lots of people find hickory too bitter. You may try using a fruit wood
or something like pecan or chinaberry, depending on where you live.

Experiment with it. You'll figu re it out.
