I will say over and over again. The best way to improve the cooking
temp on this cooker is to extend the flue to about 1-2 inches above
the cooking grate. The temperature in the cooker will even out from
end to end. Propane will definitely redu
ce the smoke flavor in the
cooker. I modified my New Braunfels with a dual burner and can cook at
any temp I want. 1 burner, low, 235 degrees steady. I can add wood
chips etc... but it is still not the same. If you are going to do the
prop
ane thing, instead, smoke it heavy with wood, wrap it, take it in the
house and put it in the oven. Same results. Low and slow is the way to
go!
