We recently purchased a New Braunfels smoker (Sam's Club) and have a hell of a time keeping the temp up. We've recently figured out how to keep 210-220 (MAX!), but have to restock quite a bit of charcoal each hour to hour and a half to the tune of a bout 30 lbs. over 10 hours or so. We have had better luck with temp consistency with full logs of wood, but are always tentative about getting too much smoke over the long haul.

Also, as mentioned here prior, we MUST leave the top vent wide open to ma ximize temp and fiddle ever so gently with the side vents to affect temp. Seems backwards to us, too!

I'm not sure I understand the modifications suggested here; would you mind explaining it again so a thick-skull like me can maybe get it?
