The thing to remember is that a good sharp knife needs to be protected. DO NOT throw it in a knif e drawer with other cutlery, protect it! Set up a special drawer for your good sharp knives. I have various knives that I have bought over the last 25 years, and wouldn't part with them for anything. I believe that a good kitchen knife collection well maintained is probably the most important important part of the kitchen hardware. If you can'e slice, chop, dice, etc. properly you anren't going to make it to the pot! My opinion on the necssity of good knives! Good cooking!
