Reading the archives. Ran across Kathy's request for beef ribs. Think I have a pretty good one. For "Short Ribs". Actually got it from a magazine at my mom’s in Kansas. Not sure which. Doesn’t matter. This was the best thing in it. Sorry it’s no t a Q recipe. For the grill.
Fire up the grill. Prepare sauce.
28 ounces tomato puree
1/3 cup yellow mustard
3 cups water
1 ½ cups cider vinegar
¼ cup dark corn syrup
2 tablespoons lemon juice
2 tablespoons brown sugar
2 tabl
espoons white sugar
2 tablespoons chili powder
1 tablespoon mustard powder
1 tablespoon paprika
2 teaspoons cayenne powder
2 teaspoons onion powder
1 teaspoon salt
1 teaspoon pepper
½ teaspoon garlic
Whisk tomato paste and musta
rd.
Stir in remaining ingredients.
Boil. Simmer 30 minutes.
Grill salt and peppered "short ribs" slowly over low coals until done turning and basting with sauce. (turn and baste from start to finish, careful not to let sauce burn. Remaining sauce may be boiled for table, though I don’t care to add it at this point.
(Whisk the puree and mustard before adding the remaining ingredients or you will have little mustard balls in the sauce designed to be thin to prevent it from burning over the fire. Don’t worry, it will thicken as it cooks.)
