I have probably smoked about 8 whole chickens
now (please, no jokes about how do you keep them
lit) with a minor problem: No matter what rub
I use, the chicken does not absorb the flavor. The
chickens come out tender and with a smokey flavor,
but they all taste the same once you get past the
skin (which I don't typically eat). This past
weekend I tried to put some of the rub under
the skin but came up with the same results. Are
there any suggestions and/or marinades I can use?
