Last weekend I used my cheapo water smoker for the first time since I got my offset firebox cooker--I was again reminded why I was so frustrated with the old cooker in the first place--babysitting with every other breath. I took the "Ideal" ther mometer completely out, leaving a hole in the top of the smoker. This allowed the smoke to escape a little easier, which I believe is an improvement--I didn't have too much heat loss. I covered the hole with foil for a while to see what happened--not m uch. I drilled a small hole in the side of the smoker at grill height and inserted a small thermometer in there. Although I knew exactly what the temp was, it was a full-time job getting it to stay where I wanted it. I would certainly suggest getting an accurate thermo. Then at least you can adjust cooking times accordingly.
I can't wait to use my offset cooker again!
