"Presentation" at a MIM contest. Reminds me of
one of the first teams I ever judges. It was ribs
"On Site" and for the presentation, the fellow opened
his cooker (a typical barrel cooker) and said.
"Now Clif
there is not much to this. Here on the left we have fire.
On the right we have meat which the fire turns into BBQ".
He didn't do well on "Presentation" but his ribs blew me
away. And by the way, they were spare ribs with the hard<
br>bone left on. You could suck the meat off the end of the
rib. No water pan, no foil, just turn and baste every
fifteen minutes.
