Company is gone (girlfriend’s mother and grandmother), and everybody loved the "Q". My girlfriend’s mother said it was the first time she didn’t want sauce on her ribs. I thought it might be that my sauce wasn’t that good but she ate plenty. Still, I know it could have been much better. The ribs were a bit over smoked and over cooked. Red throughout and falling off the bone. The brisket had quite a ring on it, too and I failed with the foil. It was tender but I cooked it in the foil so long that I lost most of the smoke flavor. All part of the process I guess. Better than the first "Q" I made on my Meco. In fact, all in all, it was pretty good. Links and chicken, very good. Red beans and rice, nice and slaw was great.
