Yes.
I think you need to start your chunk charcoal outside of your pit.
When the coals are well started put them in your pit.
The reason that you had a temp drop when you put in more charcoal
is that the heat from your lit coals was divert
ed into heating and
burning the unlit ones. This method of adding cold charcoal can
also give your meat a bad taste.
