Hi Clif, I don't think the smoking bags have chemicals. I understood that it was wood shavings trapped in a breathable liner in the bag. The shavings were supposed to make smoke then they were heated. As to Mike Scrutchfield's use of Tender Quick, there is nothing about it that requires one to give up one's personal integrity. Tender Quick is a brand name for simple curing salts that have been used for centuries to make brine cures, sausages, dry cure, ham, cured bacon, etc. It is the forerunner of the dry rubs we make in our own kitchens. It contains salt, sugar, and two types of nitrates (which you eat in quantity if you've ever eaten cured ham). The product is produced by the Morton salt company, and is deemed safe for human consumption. Tender Quic k isn't evil; it is simply a pre-packaged meat cure. Nothing more. Nothing less. At least Mike Scrutchfield is cool enough to share the secrets of his success in competition.
