Are your butts dry now? Also they draw judges from the human race so their expectations are going to vary somewhat. that said I would assume that most of not all would prefer moist meat.
BTW, that would be a good poll question, how many people put mustard/other slather on bbq before seasoning. I rarely see it myself....
