The suggestion about moist meat is excellent, just be sure not to equate "moist" with "mushy." Mushy meat is very moist, but it should not get you good scores in a competition.
Speaking of classes, if you want to take a judging class (a very good idea), there's a judging class this Saturday, Dec. 1, in Salisbury, MD. I understand there's about 50 students signed up so far. You can still register by going KCBS.US and clicking on classes, judging. I'll be helping prepare boxes in the kitchen. Say "hey" if you come.
