If you think your BBQ is good, enter a contest, turn it in, and see. If you want to find out what judges are looking for, take a judging class and become a certified judge. When you do enter your first contest, get there early and go meet some folks. You will find a large number of them willing to go out of therir way to show you what you need to do. Lastly pay attention at the cooks meeting and ask questions. When I first began competing I showed up without a clue and thanks to several more experienced people, I finished 16th out of 42 and had the time of my life.
