Didn't go big this time, only me and a buddy to help. Ended up with about 85 of total meat, 50/50 venison/pork shoulder. Added to that was abot 15 ibs of ice water and spices, salt, cure, NF dry milk and then 15 lbs of Hi temp pepper jack cheese, so I finished up with 115 lbs of summer sausage. Stuffed them in 2.5" X 22" casings about 3.5 lbs each. Ended up with 32 sticks. Just have to finsh smoking, give them a bath and wrap. Still goona end up being a long day. Didn't get out deer hunting this year due to the ankle surgery but had a bunch left over from last season I needed to do something with. Have anoter 30 lbs of venison I could've put in it but I didn't have the heart to grind up the back straps and a couple hind quarter knuckle roasts, have to save them for the frying pan. I'll post some pics later. Presently listening to Steppenwolf's 16 Greatest Hits, 1973, found it!
