I do them in the smoker now. This is an old picture. Get them cut over an inch thick. I cook mine to 160. Foil for about 45 to an hour, depending on thickness. Remove foil and sauce. Set the sauce and eat. You should be able to cut with a fork. Great way to try different rubs and sauces.
