Not at all. They are excellent and fairly easy to do.I always use my smoker, with Apple wood, at around 250*.

If they are the thin ones you will want to keep a close on eye on the meat temp, I pull them at 153*- 154*, let them rest about 10 minutes then they are good to go.

Use the same method for the thick cut ones which are a lot better.

The other gentleman is right its an excellent way to try different spices and rubs, our favorite one is a beef steak rub.
