not yet. had some(striper) smoked with sassafrass last night. its a really good meat, thank goodness :). the rainbow are really good too. what a fight the stripers put up. 21#s on the big one. the rest averaged around 10#s. a week with my son was great.

ps-there are several organic pork producers around here. i'll send you the info. i do think this acorn pork/prosciutto is interesting. we need to figure that technique out.
