I am looking to build a new smoker with an old propane cylinder that I bought. I'm not sure of what its capacity for propane was, but it is about four feet tall and 18+ inches in diameter. My question is should I make it a vertical or a horizontal pit? If its vertical do I make it a water smoker or put in a heavy gauge steel plate in place of the water pan or nothing at all? If its horizontal do I build a seperate firebox or do I simply put the fire to one end of the tank? Whats your guys thoughts.
