The meat will pull up on the end of the bone, leaving the tip of the bone exposed when they are done. Also, do a toothpick test -- poke a toothpick between the bones and see if it comes out easy and clean. Also, hold the end of the slab with tongs, holding it horizontal, and see if the slab almost breaks in the middle from it's own weight. Any or all of these tests will work.
