Yes, the marinade in the Chinese book is similar to the one I plan to use.
My cookbook says to slice between the ribs, but not all the way through, to allow more marinade to hit more meat.
And no, I don't trust the cookbook yet, since I just got it. But it was a gift from a friend who is a great cook and who DOES love the book.
My fallback plan, if I lose too much sleep over this, is to do what you suggest, and cook them low and slow.
