I went to my best (every recipe I've tried has been a keeper!) Chinese cookbook, Chinese Cooking the American Way by Catherine Liu. Her recipe for "barbecued" spareribs involves a pan of water in the bottom of the oven and hanging ribs from hooks from the top rack. 45 minutes at 350, brush with honey then 15 more minutes.
