11 AM on a Saturday finds a lot of people getting ready to turn in chicken. Saturday is also when families are spending time together. You may not know about the archives for this forum but it contains vast amounts of information going back ten years. Go towards the top of the Forums home page and look for bbq search. Click this and you will be able to search out any subject to your hearts content. Also remember that once a person posts an answer to you query, someone with the same opinion may choose not to post.
Personally, I cook on Backwoods so I'm on the moist cooking environment side of things. Whenever I do cook on an offset, depending on the design, I like to have a water pan as a heat shield at the firebox end. If you don't have a water pan you can baste the meat to help retain moisture or you can inject the meat.
