in response to your original question, we welded a kind of gutter down the center of our home-made offset. Affectionately called the "swill trough," we fill it with whatever seems appropriate: water, wine, veg, a nice bay leaf, the souls of our enemies, whatever. But a lot of people don't use any liquid in the cooker at all and have great results. I haven't actually experimented to see how much difference it actually makes in the flavor, but we'll keep using our trough none the less.
Going back to this thread: like other folks, I had about five minutes to get on the Forum this weekend, and used it to answer a question specifically to me. Unless the weather is awful, a barbecue forum just isn't going to be real busy on weekends.
