i am looking at this as an educational experience. i figured i would get one the hard way until my friend steve called. i like your advice on hanging it longer. its Easter weekend, as was going to be tough to get everyone together anyway. i doubt i will do this twice, but am glad to have the chance to do it once. it will be nice to see where this stuff comes from. meatcutters are professionals, i'm not. he'll end up with about 50% more yield than i would have. i doubt mine would have looked like what you see at the store either. chunks. i'll get some pictures for the forum when it happens, but don't attempt this at home :).
