chewey but good... Crank up the temp a little higher Mike. DOn't want you having bad food. I've made the mistake too. It's not cooked meat and I always made that mistake. Until I take it around 180 now. They are not like comp briskets, as I have tried taking the corned beef to over 200 to just see. Made some nice hash... ;-)
