just finished a class myself, the one thing i never pay much attention to was mushy meat, always thought fall off the bone was the thing.as for taste there was so much inconsistency on taste thatit was tough to say, some like sweet, some like heat. 1 judge told me that if you look at the age of the judges (45-65say) they dont like heat. tough call, add some good smoke good luck
