You can't say "they" like lots of smoke or no smoke.
Each judge has a different tolerance for heat, sweet, smoke, etc. Personally, I like to use a milder wood like Pecan and follow it up with a fruity wood such as Apple. I personally think over-smoking a good piece of meat is much worse than having a piece that might need just a little more smoke.
