Why not go and Judge a contest or two before cooking in a contest just to see what is being turned in. Before jumping in, I took a Judging class and a Q cooking class and learned alot with the two. 2nd contest we cooked, we got 3 ribbons. The 3rd contest we cooked, we came in 3rd overall out of 65 teams and I am not a good cook in my eyes, but we are consistant. One day our ship will come in, then I need to turn over my LED lights to Steph on the Slabs team. Something I said if I ever get a GC I would retire.
