I've used a two pan approach a couple times, but with a small spacer between the two pans to keep the top pan off the (hot) floor of the bottom pan. Worked well - did it because it was very cold out, and didn't want to be using excess fuel to boil water - wanted a reall extended burn...

Anyway, some drippings do get into the lower pan, and they will 'crisp up' and become difficult to clean - but it's not as messy or heavy as using sand - fact, cleanup of the upper pan was very easy - easier than using water and/or sand (with or without foil)
