The reason we've done things in a "portable" manner is so the trailer could be used for other stuff too - not just comps/vending.
Everything will either be fold-away or removable with very little effort, in effect, opening the trailer back up - unless vending/catering becomes so busy I don't have time to do anything else - man, I hope :)
