My wife must love me. She brought home an ostrich roast today, she wont eat it. She told me, "you will have the smoker going this week-end here is some ostrich to smoke". I have had ostrich in restaurants but never cooked one. Could you folks give me some advice on what rub would be best. Also to what temlp to cook it to.
