Thank you very much for the detailed explanation. Fortunately, I already have one of the grid extenders that I can place above the top rack/grid. If I am following what you say, I could assemble a grid below the top grid in order to pull it up above the pans, and then use the grid extender for my top grid. If cooking two briskets, for example, I would put one on the new lower grid and one on the extended grid. This would give me good separation between the two briskets and they would be cooking at the approximate same temperature. I greatly appreciate your help.
