Basic grocery store breakfast sausage. Remove the plastic casing, hit it with rub of your choice, cook to 165-170 in the smoker, glaze if desired, slice and munch. Excellent cook munchies, or throw a few on around 4 am at a comp and serve with a flat of Sam's biscuits and a gallon of cream gravy for an easy breakfast.
