Yesterday I wanted to smoke some ribs for my neighbors. I had nine racks of baby backs and about two dozen beef short ribs. Things were going great and I had about one hour to go so I made a quick run to the store for some side dish ingredients and when I got back, MY GOD.
I use a Stumps and I just cleaned and re-seasoned it before this cook and I guess I used too much Pam in the re-seasoning process. Well, when I got back, I had a grease fire going in the bottom of my pit and a tube of thick white smoke was racing out the top of my smoker shooting 30 feet in the air. It looked like a friggin chimney on a steel mill before the EPA cracked down on them.
To make a long story short, I couldn’t give any ribs to my neighbors but I was able to salvage a couple of decent size bowls of pork and beef rib meat after I discarded what was ruined. So does anyone have any good recipe ideas for left over rib meat?
