Went and picked up my ribs and butts today for this weekend. I always check the date on the boxes i pick from to make sure they're fresh. The worker there hold me that there's a BBQ joint they sell pork products to that they like to buy older pork. he's saying that as long as the cryovac is intact and sealed, that some people "age" it longer than a month. I think this is crazy, and in trying to keep an open mind, is there anybody out there that's either heard of this or if it's even safe !?!?!?!
