Rather than tune, use the temp differences to your advantage. We load our 'lang-like' pit according to the size of butt/brisket putting the smaller pieces in the 'colder' zones.

Yes, it does take a few cooks to learn the pit, but once you learn the pit, it actually helps our cooking process.
