I look at it long and hard,I observe for steam to see if they are still hot, observing for any juice, fat or grissel, seeing if the meat had pulled back from the bone, seeing if just by holding it if the meat is falling off of the bone to deturmine over done. I then pay extra attention to the glaze or sauce . i savor the aroma, squeeze the meat between my thumb and index finger.
i then pull on the meat to see how easy it comes off the bone. I taste the sauce from my fingers and put the rib in my cooler for my falily s dinner later that night. LOL
just joking
