Hey Tom, I agree with your statement of "as long as they are not dried out, it doesn't come into play." But, I also feel that if they (the ends) don't pull close to the way they should that it also comes into play especially if the center isn't pulling the way it should. The ends are the 2nd bite to make sure of the way the meat is pulling.
