Generally speaking it takes me at least 12 hours to cook a 7-8 pound pork butt on a WSM that is using the minion method and maintaining a temp of 250 I do not usually foilexcept when it is time to put in the cooler at a contest or if i am running behind on time, sometimes it takes 14 hours sometimes 10 but as a general rule i always use the 12 hour mark, make sure yoyu are takinf your WSM temps correctly I pu the thermometer through the top vent hole, that is its hottest point.
