Don't know how economical compared to a chuck roll but for brisket ( you'll need approx 18 )I'll smoke em up, slice them and throw them into alum pans, mix sauce with them and throwm them back on the smoker. They'll eventually break down and with the smokey sauce added to it they are great eating.
You might also look into ( I hope I have the right terminology ) a "top round" or a "gooseneck round" in lieu of brisket.
