Thanks for the advice because I have had the same issue with the egg. I was thinking of starting the meat on an offset and them transfering to the egg and you just confirmed the idea.
I agree with Ray's comments below on your book. If it is detailed like the comments you have made in this thread it should be one of the best books on the market.
I will be in Shannon and would love to meet you if you make the trip.
