tender quick to get a smoke ring, but you better have some kind of wood chunks mixed with your coals. The choice of wood is yours but it seems fruit woods are very popular. The smoke ring has no bearing upon your score as stated by all previously. Go for taste and tenderness and as Scottie says, "Get the biggest certified black angus beef brisket packer you can!"
