Hello Everyone,
This is my first time here. I just opened a BBQ restaurant. I already have a casual fine dining restaurant that has been open 8 years. I am the chef and owner of both. Have a great chef that helps me with both. I would like to add a beef rib to the bbq restaurant. I have tried sysco and southern foods. They have sent me beef short ribs, but they have very little meat on them. More like braising ribs for stocks. Can any bbq restaurant owners help me with the name of the product (specs) you are using. Also can you tell me what your food cost has been. I am figuring about 30%. Thanks for any help.
