A Cambro is a well insulated box (like a cooler). It can keep things hot or cold for a very long time. If you use them as a cooler then you need to put a pan of hot water on the bottom to warm it up to use as hot food holder.

Pat and I checked them out and we just purchased the large size (Pat wanted it. I wanted the smaller one). They both will fit 1/2 sheet trays. I don't know the measurments of the foil pans we use but we can put 2 side by side without crowding. The only difference, that we noticed, between the big and small one was that there were extra slots for more shelves.
