There is a Hawaiian style of cooking in the ground, using pork. Kailua pork is seasoned with sea salt, wrapped in Luau Leaf and set on coals, and covered with wet burlap, more banana leaf and some dirt. You can probably do a search for Kailua Pork and come up with plenty of hits.

The only full buried cooking I have heard of is a Mexican method, but don't know the name or hows it done, just saw it briefly on Food Network once.
