Since we are a bit short on banana tree leaves out here in Utah, we rely on the Dutch oven.
I would suggest: get an oven large enough (deep style), cover the bottom with cabbage leaves, add 1 cup of apple cider, put in butt. Dig a hole twice the size of the oven. Put in 20 hot charcoal brickets (not self start). Cover will a little dirt, put in oven. Cover lid with brickets, (16 for 12 inch, 20 for 14 inch) cover with dirt and leave for at least 8 hours.
